Paleo Green Protein Lunch Salad Recipe with Cilantro Balsamic























Salad:
  • 1 cup spinach 
  • 1 cup kale
  • 1/2 chopped broccoli
  • 1 diced tomato 
  • 1/4 cup diced cucumber 
  • 2 tbsp chopped onion  
  • 4 oz. tuna or chicken 
  • 1/2 avocado 
 Dressing:
  • 1 tbsp dijon mustard 
  • 1 tbsp balsamic vinegar 
  • 1 tsp red wine vinegar
  • 1 tbsp fresh cilantro 
  • 1 tsp olive oil (optional)

Put all of the dressing ingredients into a processor or blender and blend until smooth.  Top salad with dressing.
