Salad:
- 1 cup spinach
- 1 cup kale
- 1/2 chopped broccoli
- 1 diced tomato
- 1/4 cup diced cucumber
- 2 tbsp chopped onion
- 4 oz. tuna or chicken
- 1/2 avocado
- 1 tbsp dijon mustard
- 1 tbsp balsamic vinegar
- 1 tsp red wine vinegar
- 1 tbsp fresh cilantro
- 1 tsp olive oil (optional)
Put all of the dressing ingredients into a processor or blender and blend until smooth. Top salad with dressing.
