Mashed potatoes are not Paleo...or are they! I found a great way to make a little Paleo Thanksgiving dinner for my husband and I one night to celebrate Fall! Here is what you need:
- 1 head cauliflower
- 1/4 cup chicken stalk
- 1 cup fresh cranberries
- 2 tsp cinnamon
- 1/2 lb turkey
- 1/4 cup onions
- 1 tbsp lemon juice
- 2 fresh garlic cloves
- Salt and Pepper to taste
Mashed Potatoes:
- Fill a large saucepan with about an inch of water, and insert a steamer basket. Bring the water to a boil, and add the cauliflower. Reduce the heat to a simmer and cover for about 8 minutes.
- Drain the steamed cauliflower, and transfer to the bowl of a large food processor. Add in the lemon juice, garlic, and seasonings, and process until smooth.
You can use a pan to cook these together but I used my slow cooker.
- Add the chicken stock, onions, cranberries, cinnamon, and turkey into the slow cooker and cook on low for 8 hours or on high for 4 hours.
- Once cooked, serve with the mashed potatoes.
